1. Start by melting the vegan butter in a deep saucepan over medium-high heat until it's mostly melted.
2. Once the butter is melted, add in the diced apples. Stir them around to coat them evenly with the butter.
3. Sprinkle in the brown sugar, maple syrup, freshly squeezed lemon juice, cinnamon, nutmeg, and a pinch of salt. Continue stirring to combine all the ingredients thoroughly.
4. Allow the apple mixture to simmer and reduce for about 15-20 minutes. The apples should become mostly tender during this time, but remember that they will continue to soften in the oven. The goal here is to achieve a syrupy consistency with the liquid.
5. To thicken the filling, add in the cornstarch and stir well. This will help bind the liquid and create a nice, thick texture. Remove from the heat.
6. Preheat your oven to 350°F (175°C) in preparation for baking.
7. In a separate bowl, combine the rolled oats (or steel-cut oats if preferred), melted butter, brown sugar, cinnamon, and a pinch of salt. Mix everything until it forms a crumbly texture.
8. Transfer the finished apple filling into a 9-inch round pie dish, spreading it out evenly.
9. Now, take the crust mixture from the bowl and press it evenly across the top of the apple filling. This creates the delicious crispy topping.
10. Place the assembled apple crisp in the preheated oven. Bake for approximately 30-40 minutes or until the crust turns a beautiful golden brown.
11. Remove the apple crisp from the oven and let it cool slightly.
