Bloomin’ Cauliflower with Horseradish Dip

Serves 2-6 (depending on the size of cauliflower)

Ingredients

1 large cauliflower (a small one works too) 
3/4 cups vegan butter melted (or olive oil)
2 tbsp salt

Coating

1/2 cup panko breadcrumbs 
1 tbsp (smoked) paprika 
1 tbsp cumin 
1 tsp dried oregano 
1 tsp dried ground thyme 
1 tsp salt 
1 tsp cayenne pepper spice 
1/2 tsp garlic powder 
1/2 tsp black pepper 

Horseradish Dip

1/2 cup vegan mayo 
2 tsp ketchup 
2 tbsp horseradish 
1/4 tsp (smoked) paprika 
1/4 tsp salt
Pinch of garlic powder
Pinch of dried oregano 
Dash of cayenne pepper 
Dash of black pepper

Recipe

1. Place a large pot of water on the stove and heat it until it comes to a boil.

2. Remove the outer leaves from the bottom of the cauliflower by hand, leaving the stem intact.

3. Use a pairing knife to carefully cut around the stem, removing any remaining pieces of leaves.

4. Trim the bottom part of the stem, cutting off just enough to allow the cauliflower to stand upright.

5. Prepare a large mixing bowl with cold water and add salt. This will help clean the cauliflower between the florets. Submerge the cauliflower in the water and place another bowl on top to keep it fully immersed.

6. Take the cauliflower out of the water and transfer it to the boiling pot. Boil the cauliflower for 10-15 minutes, or until it becomes fork-tender. The cooking time may vary depending on the size of the cauliflower.

7. While the cauliflower is boiling, combine the coating ingredients in a bowl. Remove the cauliflower from the boiling water and let it cool until it is safe to handle.

8. Preheat the oven to 375°F (190°C).

9. Using a knife, make 6-8 slits from the top of the cauliflower down to about three-quarters of the way, evenly spaced around the cauliflower.

10. Pour the melted vegan butter over the cauliflower, ensuring that it spreads evenly.

11. Use your hands to coat the cauliflower with the coating mixture. Alternatively, you can place the cauliflower upside down in the bowl of coating to allow it to adhere better.

12. Once the cauliflower is thoroughly coated, place it in the preheated oven. Bake for 35-45 minutes, or until the outside of the cauliflower has crisped up. The baking time may be longer for larger cauliflowers.

13. While the cauliflower is baking, prepare the Bloomin' dip by combining the necessary ingredients. Let the dip sit in the refrigerator while the cauliflower finishes baking.

14. Remove the cauliflower from the oven when it is done baking. Serve it with the prepared Bloomin' dip.
