High-Fiber Cranberry Oat Bars

Makes 12 snack-sized bars

Ingredients

1/3 packed cup pitted medjool dates
1 cup plant-based milk (divided into two 1/2 cup portions)
1/3 cup maple syrup
1/2 cup peanut butter
1 teaspoon vanilla extract
2 cups rolled oats
1/2 cup dried cranberries plus 3 tbsp for topping
*you can substitute cranberries for any dried fruit, vegan chocolate chips or nuts

Recipe

1. Preheat your oven to 325°F (163°C) to ensure it's at the right temperature when you're ready to bake the bars.

2. In a blender, combine the pitted dates with 1/2 cup of plant-based milk. Blend on high until the mixture turns into a smooth paste.

3. Add the remaining 1/2 cup of plant-based milk, maple syrup, peanut butter, and vanilla extract to the blender. Continue blending until all the ingredients are well combined, resulting in a creamy and smooth mixture.

4. Transfer the blended mixture into a mixing bowl.

5. Add the rolled oats and dried cranberries to the bowl. Gently fold them into the mixture until the oats and cranberries are evenly distributed.

6. Prepare a 9x9 inch (23x23 cm) square baking tray and line it with parchment paper.

7. Pour the oat and cranberry mixture into the lined baking tray. Use a spatula or your hands to press it down firmly and flatten the surface until it's smooth and even.

8. Sprinkle some additional dried cranberries on top, pressing them gently into the mixture.

9. Place the tray in the preheated oven and bake for 45 minutes or until the edges turn golden brown.

10. Once done, remove the tray from the oven and allow it to cool in the tray for about 5 minutes. This will help the bars to set.

11. After 5 minutes, carefully transfer the entire mixture (with the parchment paper) to a cooling rack. This will allow the bars to cool completely and prevent them from becoming soggy.

12. Let the Cranberry Oat Bars cool completely on the cooling rack, allowing the flavors to meld together and the bars to firm up.

13. Once the bars have cooled completely, use a sharp knife to cut them into 12 even rectangular pieces.
