Soy Curls
4 oz dried soy curls
2 cups hot water
2 tbsp soy sauce
½ tsp onion powder
½ tsp garlic powder
½ tsp smoked paprika
½ tsp chili powder
½ tsp ground cumin
½ tsp salt
½ tsp black pepper
3 tbsp cornstarch
Peppers & Onions
2 tbsp extra virgin olive oil
3 cloves garlic, minced
1 red onion, sliced to ½ inch thickness
1 large green pepper, sliced to ½ inch thickness
1 large red pepper, sliced to ½ inch thickness
1 large yellow pepper, sliced to ½ inch thickness
½ tsp chili powder
½ tsp smoked paprika
½ tsp ground cumin
½ tsp black pepper
salt to taste
serve with corn tortillas
optional garnishes: cilantro, lime
optional sides: guacamole, pico de gallo, vegan shredded cheddar
1. In a large mixing bowl, combine the soy curls, hot water, soy sauce, onion powder, garlic powder, smoked paprika, chili powder, ground cumin, salt, and black pepper. Stir the mixture well, ensuring the soy curls are thoroughly coated with the marinade. Allow the mixture to sit for 10-15 minutes to marinate.
2. Preheat your oven to 375°F (190°C).
3. After marinating, strain the soy curls using a strainer. Squeeze out any excess water from the soy curls by hand. Transfer the soy curls back into the mixing bowl. Coat the soy curls evenly with cornstarch.
4. Spread the coated soy curls onto a baking sheet. Bake in the preheated oven for approximately 20 minutes, or until crispy.
5. While the soy curls are baking, heat the extra virgin olive oil in a large frying pan over medium-high heat. Add minced garlic and sliced onion to the pan. Season with a pinch of salt and sauté for about a minute until fragrant.
6. Add the sliced bell pepper to the pan with the garlic and onion. Season with another pinch of salt. Cook the mixture until the peppers reach your desired level of tenderness.
7. Close to when the peppers are ready, sprinkle chili powder, smoked paprika, ground cumin, and black pepper over the peppers. Stir to incorporate the spices evenly. Once cooked, remove the pan from the heat, leaving the vegetables in the pan.
8. Move the cooked peppers to one side of the pan. Add the baked soy curls to the other side of the pan. Optionally, garnish with cilantro leaves and serve with lime wedges.
9. Serve the soy curl and vegetable mixture directly from the pan with warm corn tortillas. Optionally, accompany with guacamole and pico de gallo for additional flavor. Enjoy your delicious soy curl fajitas!
