Easy, Fluffy & Tasty Vegan Pancakes

Makes 4 large pancakes

Ingredients

1 cup (125g) all-purpose flour 2 tbsp organic white sugar 1 tbsp baking powder 1/2 tsp salt 1/2 tsp ground cinnamon 1 cup (240mL) plant-based milk 1 tbsp lemon juice 1 tsp pure vanilla extract vegan butter for greasing the pan and serving maple syrup for serving

Recipe

1. Combine flour, organic white sugar, baking powder, salt, and cinnamon in a large mixing bowl. Use a whisk to mix the ingredients thoroughly, ensuring an even distribution.

2. In a separate bowl, combine plant-based milk, lemon juice, and vanilla extract. Stir the ingredients together until well blended.

3. Pour the wet ingredients into the bowl with the dry ingredients. Whisk the mixture until you achieve a smooth, lump-free batter. Allow the batter to rest for 2-5 minutes to thicken slightly.

4. Heat a non-stick pan over medium heat and melt some vegan butter in the pan. Pour approximately half a cup of batter into the pan, shaping it into a circle. When bubbles begin to form on the surface of the pancake, carefully flip it over. Continue to cook until the pancake is a light golden brown on both sides. Repeat this process with the remaining batter, adding more vegan butter to the pan as needed.

5. Serve your fluffy vegan pancakes warm, topped with vegan butter and maple syrup. Enjoy your delicious homemade pancakes!
