Soft and Chewy Vegan Chocolate Chip Cookies

Makes 18-24 cookies

Ingredients

180g (1.5 cups)  All-Purpose Flour
1/2 tsp baking soda
1/2 tsp salt
113g (1/2 cup) unsalted vegan butter
85g (1/2 cup) brown sugar
43g (1/4 cup) organic white sugar
3 tbsp vegan milk
2 tbsp maple syrup (or 1-2 tsp vanilla extract)
175g (1 cup) vegan chocolate chips

Recipe

Preheat your oven to 350F/180C
1. Combine the all-purpose flour, baking soda and salt into a mixing bowl. Stir with a whisk. Pass through a sifter into a separate bowl (optional)
2. In a stand-mixer (or with a hand-mixer), combine the vegan butter, brown sugar and white organic sugar until smooth and creamy (1-2 mins). 
3. Add the vegan milk and maple syrup and mix until combined. 
4. Add half of the flour mixture and mix until combined. Add the other half and mix until combined.
5. Fold in the chocolate chips with a spatula or spoon. Spoon out about 2tbsp of cookie dough per cookie onto a cookie sheet lined with parchment paper. 
6. Cook in the oven for 10 mins. Cook up to 12 minutes for crispy/toffee-like edges. 
7. Let sit on the cookie sheet for 10 minutes. This will allow the cookies to continue cooking on the pan.
