EASY, QUICK, DELICIOUS Vegan Quiche

Makes 12 mini quiches

Ingredients

4 cremini mushrooms, chopped finely
1/2 red pepper, chopped finely
3 scallions, chopped finely
4 pieces Lightlife Smart Bacon, chopped finely
1 container of Just Egg
1/4 cup of vegan cheddar
1 tsp of black salt
1/4 tsp of smoked paprika
425g puff pastry dough

Recipe

1. Preheat oven to 375F/190C. 
2. Combine the vegetables, Lightlife Smart Bacon, Just Egg, vegan cheddar, black salt and smoked paprika in a mixing bowl.
3. Lay out the puff pastry sheet and cut into 4x4 inch squares.
4. In a greased muffin tin, insert the squares into the muffin slots. 
5. Pour the mixture from the mixing bowl into each slot, filling just below the rim.
6. Bake in the oven for 20-30 minutes. Insert a knife into the center of one of the quiches. If it comes out clean, it's ready. (NOTE: Some vegan cheddars will leave the knife wet, 30 minutes should be enough time.)
7. Let cool in the muffin tray for 10 minutes (it will finish cooking in the pan).
