Vegan Kofta

Makes 15-20 Kofta Skewers

Ingredients

2 340g packs impossible ground "beef"
1 medium onion chopped finely
* flax egg
* (2 tbsp milled flax seed + 2 tbsp water. Mix and let sit for 15 minutes)
1 tbsp olive oil
1/2 cup panko breadcrumbs
4 tbsp lemon juice
2 tbsp tomato paste
4 tbsp parlsey chopped finely 
2 garlic cloves minced
2 tsp salt
1 tsp black pepper
1 tsp ground nutmeg
1 tsp cayenne pepper spice
2 tsp paprika
1 tbsp dried ground coriander spice

*You will need
20 skewers soaked in water for 30 minutes

Recipe

1. Mix all of the ingredients together in a large bowl.

2. If baking, preheat the oven to 400F. If barbecuing, grease and preheat the barbecue. 

3. Grab a small handful of the mixture and shape it into a small log, you can roll it between your hands to achieve this. Stick a skewer through the centre of the mixture. Place on a greased baking sheet. Repeat with the rest of the mixture. 

4. Brush olive oil on the top of each kofta. 

5. Bake in the oven for 15 minutes on each side. If barbecuing, cook for about 10 minutes on each side. Have the skewers sticking out of the front of the barbecue. It is best if you can close the lid of the barbecue while cooking.

Notes

*Kofta can be made in many different ways. You can substitute almost all of the ingredients and invent a kofta that's uniquely your own! 

In the video, I serve this on a warm vegan naan bread with:

Tomato & Cucumber salad:
2 large cucumbers diced, 1 red onion diced, 2-3 medium tomatoes diced, chopped parsley & salt to taste.

"Tzatziki" inspired sauce:
1.5 cups vegan mayo, 4 tbsp lemon juice, 1 clove minced garlic, 2 tbsp dried dill, 1 mini cucumber chopped very finely, salt to taste. Allow to sit in the fridge for 30 minutes before serving. 

*These recipes make enough salad and tzatziki for all of the kofta (serves 15-20).
